Barbecue Bulgur Sandwiches


So, if you don't know this about me—I'm crazy about bulgur. It's really good, and good for you. And it's really chewy. So I thought it might make a groud x substitute. This is my first try, with a sloppy-joe sort of application. But they're better, and no more messy.

Barbecue Bulgur Sandwiches
(makes 5-6 sandwiches)

sandwich rolls (bread)
toppings
cheese, onions, tomatoes

1 c. bulgur
1 c. water
1 c. broth
⅔ c. barbecue sauce

Mix bulgur, water, broth; S&P, cook. Stir in barbecue sauce (more or less depending on bulgur). Toast bread with cheese, add toppings.

i might actually try this. back when i didn't eat red meat i made sloppy joes with rice once. they were pretty good. i LOVE sloppy joes. i have a good recipe for cuban sloppy joes, which is an intersting twist, if anyone is interested.

You can't find bulgur just anywhere. For example, my local trader joe's doesn't have it. Bigger stores usually do. Look for it near the rice, or the flax seeds.

I am always looking for a substitute for ground beef. I try it without telling Scott and just see if he says anything. It's almost like a game!
